Historic Recipes for Thanksgiving
At the museum we have a few old cookbooks and several recipe books put together by ladies of the various churches. They include some interesting flavors and some timeless classics. Included below are several recipes from historic Wayne cookbooks, try one this holiday season for a historic flare.
Corn Relish
2 doz. Corn (cut off cob)
2 bunches Celery
1 small Cabbage
1 large Onion
5 Green Peppers
1 Red Pepper
2 tbsp salt
4 tbsp mustard powder
4 cups brown sugar
2 quarts vinegar
1 tsp Turmeric powder
(Combine all together, boil 20 minutes)
Sandwich Loaf
1 loaf of bread cut lengthwise
1 can of crab or ground chicken
3 boiled eggs
salad dressing
1 can asparagus
1 cup creamed butter (spread on each side of bread)
1 pkg. pimento cheese
mustard, salt and pepper to taste
Layer 1 – Mix boiled egg, salad dressing, mustard, S&P to taste
Layer 2 – Mix meat and salad dressing
Layer 3 – Asparagus and salad dressing
Stack layers and frost loaf with pimento cheese. Slice crosswise.

Chocolate-Ginger-Rum Pie
Crust
Smash 14 ginger cookies
Mix with 5 tbsp melted butter, line pie pan, bake 10 mins
Filling
1 3/4 c. milk
1Tbsp cornstarch
4 Tbsp cold water
1 Tbsp Gelatin
1/2 cup sugar
4 egg yolks
Pinch of Salt
Chocolate Layer
2 squares melted chocolate
1 tsp Vanilla
Rum Layer
4 egg whites
1/2 cup sugar
1/8 tsp cream of tartar
1 tsp. Rum flavoring
Instructions – Soak gelatin in cold Water. In double boiler scald milk, add sugar, cornstarch, pinch of salt and egg yolks. Stir constantly until a custard is formed. Stir in Gelatin. Divide custard in half. To half, add chocolate and vanilla, pour into crust while hot. Let remaining custard cool, beat egg whites, cream of tartar, sugar, blend into cooled custard, add rum flavor. Spread over chocolate layer, chill pie and serve.
Lime Cream Cheese Salad
1 pkg. Lime Jello
1 8oz package cream cheese
2 cups crushed pineapple
12 large marshmallows, cut up
1 pt. whipping cream
crushed walnuts
Instructions – Combine Jello with softened cream cheese. Bring to boil pineapple and marshmallows, marshmallows will melt. Add to Jello, let cool. Beat whipping cream until stiff, mix into Jello mixture, refrigerate overnight and serve.
Cranberry Orange Bread
2 cups sifted flour
3/4 cup sugar
3 tsp baking powder
3/4 tsp salt
1/2 tsp nutmeg
grated rind of one orange
3/4 cup orange juice
1 egg, slightly beaten
2 tbsp salad oil
1 cup chopped cranberries
Instructions – Combine dry ingredients in bowl, add orange rind, mix. Separate bowl combine orange juice, egg, salad oil. Combine into dry ingredients. Fold in cranberries. Spread into greased 9×5 pan, bake at 350 for 60-70 minutes.
